I haven’t posted in months–so much has changed (I moved to NYC and started a new gig) and I’m deciding whether I’ll continue this blog. But I’m back, for now. And I’ve unlocked my southern woman super power: scratch red velvet cake.
I’ve wanted to try baking this cake for a while, but I was so scared I’d mess it up that I practiced on other less meaningful cakes first. I say less meaningful because my grand aunt, who passed away when I was a teen, made the most wonderful red velvet cake. We were close and I admired her baking. So, I wanted mine to taste like hers.
I think I’m pretty close. I followed this recipe. The cake was super moist until I ate the last piece six days after baking. The icing was the perfect blend of tangy and sweet.
I think my aunt would be proud of my work and I can’t wait to make this cake again for my family when we celebrate the holidays later this year.
