Hey y’all! It’s still pumpkin season and I’m still finding new ways to make everyone at work fat…just kidding, but I do appreciate being able to share them so I don’t eat them all. These Maple Glazed Pumpkin Muffins are a combo of two great recipes: these muffins (without the chocolate chips) and Maple Glaze. They are kinda healthy as they are made with whole wheat flour and nut milk, but there’s nothing healthy bout the glaze, so if you care about that omit it or keep it light. You could use pumpkin spice or make your own blend. I was excited to finally use a spice blend a friend got me from the local farmer’s market. They stay moist if packed tight for 3-4 days. I didn’t have to worry bout that cause they disappeared after a few hours at work. Enjoy!
