Hey y’all! I visited New Orleans again a couple weeks ago and really immersed myself in the food culture–like the whole trip was about food. Since, I’ve craved everything cajun, creole and spicy. This simple Jambalaya is everything. To lighten the prep, I used my food processor to chop all the veggies. I added an extra jalapeño (only do this is you love spice in every bite). I recommend adding a fourth to half a cup more chicken broth (as my rice needed more help cooking). Also, please make your own cajun seasoning. It’s super easy and much better that the store bought stuff. Enjoy!
