It’s officially fall which means lots of pumpkin everything. While I’m not a huge pumpkin fan (especially pumpkin spice coffee drinks), I do love the smell of pumpkin baked goods like this Pumpkin Granola. I make lots of granola, so I only loosely followed this recipe. I added a heaping handful of unsweetened shredded coconut and sliced almonds. I subbed sunflower seeds for the pepitas. If I make again, I’ll follow the slow baking process of my favorite granola cause this one comes out soft in the middle and I like my granola super crunchy. Yay fall!
