Vanilla Almond Milk Cupcakes with Strawberry Buttercream Icing

Hey y’all! It’s final exam grading time which means lots of procrastination. This weekend my place was immaculately cleaned, I cooked and baked all to avoid the inevitable. I finally started grading yesterday with the help of these Vanilla almond milk cupcakes. Of course, I had no plans to make cupcakes this weekend, but I always have ingredients on deck. I like these cupcakes because they are made with almond milk, a staple in my house. I was a little short on butter so I added coconut oil. Also, I didn’t use almond extract. I added more vanilla instead. The strawberry buttercream icing was left over from the Strawberry Cake I made for Easter. All that sugar held up the buttercream just fine. Now that I’m about halfway through grading papers, I can take the rest of the cupcakes to the office. Enjoy!
