I’m obsessed with vegetarian bowls in my lunch box. They are healthy, filling and fairly easy to make. In my lunchbox this week is my new favorite Jalapeño Lime Veggie Bowl. This one takes a bit more time to make, but can come together quickly if you make and cool the quinoa and sweet potatoes in advance. It also keeps well for up to four lunches if you serve the avocados fresh each day. Enjoy!
