Hey y’all! After about a month of clean eating and very positive results, I spent the weekend in Atlanta doing my scholarship at a conference and celebrating my best friend’s birthday. I had lots of fun, but I cheated big time with alcohol and sweets. Fortunately, I planned my meals for this week and made my grocery list before my trip. So I’m back on track, starting my day with these yummy Flourless Blueberry Breakfast Cookies. These come together quickly in one bowl with simple ingredients. The almond butter is the substitute for flour. These are a filling, flavorful, healthy breakfast cookie. They keep well in the fridge, but I warmed mine a bit before eating.
