Who says you can’t eat your favorites and still be fit (and fine)?? Mexican food is probably my favorite and these Chicken Tinga Tacos are a welcome edition to my recipe book. I subbed lettuce for the flour tortillas and smashed my avocado with salt, a squeeze of lime juice and garlic powder. I boiled the chicken breast and shredded them after cooling. These quick tacos come together in less than 30 minutes. Enjoy!
