Hey y’all! I’m super excited about heading to Miami tomorrow for fun with friends and a two-day music festival. Of course, I plan to eat everything I see while I’m there. So to prep, I’m keeping it healthy. This Veggie Burrito Bowl is my new favorite dish. Savory sweet potatoes are my thing now and these Mexican seasoned taters are perfect in this bowl. Instead of the recommended dressing, I used my favorite chipotle ranch dressing. It’s soooooo good!
