The best thing to come out of my Whole 30 challenge was Whipped Sweet Potato Bowls, but the best part of the sweet potato was missing from the whip. When you bake sweet potatoes, they caramelize in the best way. But this yummy goodness wasn’t making it to my bowls, so I’m glad I found a better way to bake my potatoes: Half baked sweet potatoes. While this method didn’t prove to be any faster for me (I baked for about 45 minutes), it allowed me to get the caramelized goodness in my whip. So worth it and so yummy! Now I’m excited about having upgraded sweet potato bowls for breakfast this week!
