Hey y’all! As I mentioned in a recent post, I’m experiencing some health challenges which means I’ve been working out less and eating on the go. This, coupled with the holidays and lots of travel, has caused me to gain a significant amount of weight in a short period of time. I’m not happy with the weight gain, but I’m I know my health is most important, so I’m slowly making changes to get this weight off. Inspired first by the kale superfood side salad at Chick-fil-a, then a great vinaigrette, and finally a bomb kale mix, I threw together a great lunch salad. For the salad I used baby kale greens, sugar free craisins, chopped pecans, and goat cheese crumbles. For the vinaigrette I combined olive oil, apple cider vinegar, maple syrup, salt, and pepper. The ingredients are simple, yet so good. I put them in mason jars for easy prep for my lunchbox.
