Hey y’all! I’m not wasting any time getting back to my regular, (mostly) healthy eating after the Thanksgiving holiday starting with these Sheet Pan Shrimp Fajitas . I’m particularly motivated to get back on track by the fact that I haven’t worked out in almost a month and my college friends & I are meeting up in less than a week for a concert in Nashville (Xscape reunion tour 😊). I’ll be back in my dance fitness class this week, but in the meantime I’m eating healthy and good. I just ate mine in a bowl with a squeeze of fresh lime juice, but these would also be great in a lettuce wrap with some guacamole. Enjoy!
