I’m working my way back to meal prepping and making sure don’t have to worry about lunch during the week. This week was a bit of a struggle after my trip to Dubai, but I managed to make meal prep happen.
Breakfast
My own smoothie creation: unsweetened almond milk, frozen blueberries, frozen banana, almond butter, unsweetened cocoa powder, & sea salt. It’s yummy and filling.
Lunch
I’ll be posting about this simple mandarin orange mason salad soon. The simple ingredients come together perfectly.
Dinner
Still a favorite, Barbecue chicken stuffed sweet potatoes.
Snack
My first try with almond flour baking. These almond flour pumpkin muffins will be on the blog soon.
