Mealprep has saved my life these last few weeks. Without it, I would have probably had ketchup or ice for dinner a couple nights. Most days I’ve had just enough energy to heat up something in the microwave. So having my meals prepped in advance was super helpful. Last week I made Savory Butternut Squash Soup for the first time. To make the soup more savory than the recipe provided, I cooked the onion and garlic in bacon fat. Not sure I’ll do that again, as the bacon fat flavor overpowered the dish. But it was yummy in my lunchbox anyway.
