Happy Sunday!!! I think I made it through the worst of busy weeks for a while. So, I decided to treat myself with baked goods before the work week starts (and before I spend the day doing homework). These Healthy Banana Bread Muffins are perfect. I had just enough ingredients to make a half batch (6 muffins). I added walnuts and baked the muffins for 25 minutes. And they are perfect! I plan to take the rest to the office tomorrow…if there are any left! Enjoy!
