Hey y’all! I usually travel on Labor Day Weekend, but this year I needed to catch up on everything and get some rest. Staying home allowed me to get an early start on meal prep for the week with these yummy Vegan Apple Cinnamon Granola Bars. The base of the bar is simple: toasted oats, almonds, nut butter, agave or maple syrup, and medjool dates. But the opportunities to customize this bar are endless so I added dried apples, cinnamon, and vanilla extract. They are so easy to make and so good. I plan to have them for breakfast this week with some vanilla Greek yogurt. Enjoy!
