Hey y’all! I’m exhausted. This week I welcomed and oriented a new class of law students, second-year students, and transfers. The first week brings so much welcome energy, but I’ll admit, being on all the time is tiring. And, because being a lawyer ain’t enough, I also started a masters degree in educational psychology (adult education) this week. So yeah, I’m tired. But I got meal prep done and I’m getting ready to prep again for next week.
I hope to post my Mealprep Chronicles along with new recipes each week. I generally cook all Monday-Thursday meals on Sunday. I eat out on Fridays and Saturdays. I thought it might be cool to chronical my weekly meal plans in one place. So, if you’re looking for mostly healthy meal plans and you’re cooking for one, you can find them here.
Because this week was busy, I mostly prepped dishes I cooked in the past for ease. Here’s the week meal-by-meal (with links):
Breakfast: Two Almost Whole 30: Bacon & Spinach Egg Muffins & a banana
Lunch: Cajun Chicken Breast Caesar Salad & Berries
Dinner: Whole 30 Chilli Stuffed Sweet Potatoes (P.S. I wasn’t a fan of this recipe even after beefing up the chilli, so I didn’t post about it)
Baking: Best Ever Chocolate Chip Cookies
