Almost Whole 30: Bacon & Spinach Egg Muffins 

It’s the first week of school which means my colleagues and I will welcome a new class of law students. Other than my birthday, it’s my favorite time of the year. The excitement of new students gives me so much life. There will be plenty to eat this week: lunches, dinners & dessert receptions to welcome new students. But I’m hoping to stay on track by starting my day off with a hearty, health breakfast. Egg muffins are my latest breakfast obsession and theses Bacon & Spinach Eggs Muffins are so yummy. They are also Whole 30 compliant if you omit the cheese. I added onions and garlic to the recipe. I also cut the cheese in half. I’m almost as excited about breakfast this week as I am about meeting new students. Happy new year!
