I don’t remember the last time I had pasta. It might have been before I did Whole 15 (which was almost 2 months ago). Thanks to zoodles, I haven’t missed or craved it. At this point, the only exception I’d make was for homemade pasta. And I don’t have the patience for that. So it’s still Zoodles Forever. I’m enjoying finding new ways to eat them and these Spinach & Feta Chicken Meatballs are the best yet. I wasn’t in the mood for visiting multiple grocery stores this week, so I subbed a tbsp of dry oregano for fresh. And, as you can see, my meatballs are pretty big (they were supposed to be mini, but the quicker I can get my hands out of raw meat the better). I made the balls from a heaping tablespoon. I stuck with 1/3 cup panko though next time I’ll use 1/2 as the meatballs were slightly wet.
