It’s day 8! My gum cravings are gone and I look forward to black coffee in the morning. I absolutely love cilantro in anything. When mixed with lime, it makes anything taste good. So for dinner, I had baked cilantro lime shrimp from my favorite cookbook, Skinnytaste Fast & Slow.
I paired the shrimp with Cilantro Lime Potatoes. I decided to slice the potatoes with the mandolin attachment on my new veggie slicer mostly because I’ve been dying to use it since I got it two weeks ago. I wanted the potatoes to have a little kick, so I added one third of a jalapeño (chopped small, seeds removed). I don’t know what I would do if white potatoes were still excluded from Whole 30. The shrimp and potatoes made a perfect light bite. Enjoy!
