Whole 15: Whipped Sweet Potato Bowls 

It’s day 6 and I survived my first event with food today. Fortunately, they had fruit so I ate it twice. I was more excited about getting home to make another Whipped Sweet Potato Bowl than having a doughnut or pastry. For me, that’s major progress. These bowls are perfect with blueberries, cinnamon and a splash of coconut milk. But the whipped Sweet Potato is also great with just a dash of nutmeg. It reminded me a bit of sweet potato pie.   

I baked the sweet potatoes in advance and heated them up a bit before blending them with almond milk & butter. I froze my fresh blueberries and the cold was the perfect pop with the warm whipped potatoes. Enjoy!
