I absolutely love guacamole! I could eat it by the spoonful without chips. So when I saw this Whole 30 Non Dairy Fiesta Chicken Salad recipe, I knew I would love it. Basically it’s guacamole with shredded chicken. Yum. I boiled my chicken breast cause it’s fast that way. And since I plan on eating this for lunch for 4 days, I saved the chopped veggies for later. Only thing it’s missing is a margarita…13 days!
