Last Sunday I said I wouldn’t, under any circumstance, bake on any Sunday before my upcoming trip to visit family in Florida and hit the beach. I love Sunday baking. It’s actually really relaxing for me. But I also love looking good in my bikini.
So this Sunday, I didn’t bake. But I did make cheesecake with ingredients I barely had (I modified a lot). I started by improvising The Crust made from walnuts, raisins, coconut oil, and a pinch of salt. Next I improvised The Cheesecake with much smaller portions of the same ingredients. Then, I tied my hands together for 2 hours while they chilled in the fridge.
I had mini Mason jars left over from a craft project and they were the perfect place for my no bake, walnut crust, cheesecake. Yum!
How did they turn out? They look super easy to make. Nice job!

Oh portable no-bake cheesecake could be a very dangerous thing! I wonder how many of those cheesecake jars I could fit in to my purse!! 😀

lol fortunately I only salvaged together enough ingredients to make three but more could be dangerous
