I like baking way more than cooking. My love for eating doesn’t match my love for cooking. Maybe it’s because washing dishes is probably my least favorite household chore. That includes loading and unloading the dishwasher. So I’m always looking for quick meals that require the fewest cooking utensils. This Creamy Sundried Tomato Chicken meets my fast and few requirements. For the most part, I followed the recipe except for the sundried tomatoes. Y’all! Please (please please) don’t buy sundried tomatoes in oil. Like ew. I don’t even know why they come that way. Buy the ones that come in a bag without the oil. Even better, buy them chopped as that’s what the recipe calls for, and save yourself the effort.
Also, the recipe calls for salt and pepper AT THE END. Season your chicken and you won’t need to season the sauce. I’ve held on to cooking show advice from years ago: if you don’t season meat before you cook it, you’ll never get it seasoned well after. I believe that. I used unsalted butter so the dish, with my seasoned chicken, wasn’t overly salty.
I planned to serve the chicken with whole wheat pasta, but decided on salad. Hence the meat only photos. But this chicken is so good, it doesn’t need sides. Enjoy!
Looks fantastic! I love sun dried tomatoes. Doing dishes is the worst!!! And I don’t have a dishwasher to it’s even worse than the worst!!! 😀

Oh wow. Well, I guess I won’t complain too much. I love them too. These were smoked. My first time trying them and it was great!
