I’m an educator in real life and my biggest pet peeve is students who do not follow instructions. Yet, every time I try a new recipe, I do things my own way. The irony.
Sometimes not following instructions works out. I think this Lemon Poppyseed Loaf was a success, but since I didn’t follow instructions, I won’t know until I try again. I didn’t follow the last instruction–mixing the wet and dry ingredients by adding milk. This might explain why the cake was slightly dense. I found it quite tough when filling the loaf pan. I also used almond milk (as I often do) for both the loaf and the glaze. Oh, and coconut oil.
If you try this recipe and actually follow instructions, let me know. I shared the bread with my favorite leasing agents and they loved it. So I really have no way of knowing until I make it again (which, judging by my scale, won’t be anytime soon). Enjoy!
