A Different Kinda BBQ

It’s Memorial Day! I am thankful for those who gave their lives to protect my freedoms. Thanks to all service members and their families for their sacrifice. 

I’ve been pigging out for the last two weeks. First my birthday, and then a week long work conference in Texas. So, while I’d normally use a holiday to cheat and make my rounds at cookouts, I’m taking it light this year with a different kind of BBQ. These BBQ Chicken Stuffed Sweet Potatoes are bursting with flavor. The combination of smoke, sweet, and spicy make a party in your mouth. I boiled my chicken and used my new food processor to chop. I was really looking to make this dish as easy as possible. I think my potatoes were a little larger than medium so I baked them for almost 1.5 hours. I think a number of toppings would work, making these great for a party. I went with banana peppers, red onion, and cilantro. The smoked cheddar is a little pricey but so worth it. When I’m not lazy cooking, I’ll probably make my own BBQ sauce. But this time, my favorite original Sweet Baby Rays did the job. Let me know what toppings you love. Enjoy!
