This blog is keeping me accountable for meal prepping no matter what. After a fun long weekend in DC with friends, the last thing I wanted to do was grocery shop and cook for the week. But, I pushed through and got something wonderful: vegan meatballs! I was also motivated to make these because I wanted to try out my new mini food processor. It works great and these meatballs are super yummy. I added Italian seasoning and ate them on whole grain linguini with marinara. Enjoy!
