So a close high school friend is experiencing the death of her parent. I wish I could hop on a plane and go give her a hug, but since I can’t, I’m sending her some warmth and liquid courage in this Rum Cake. It’s been a while since I’ve made the cake from scratch so I was a little nervous. But it came out great. Instead of a bundt, I made the cake in two loaf pans to make it easier to ship. I probably wouldn’t do that again but it turned out great (until I tried to flip it out of the pan though I think it’s cause the cake was still too warm). I love rum, but even I couldn’t get all the syrup in the cake. About 2/3 of the syrup was good enough for a slice to make my stomach burn. Lit. Very lit!
