I finally gave in to the zoodle hoopla and I’m so glad I did. This Zucchini Lasagna is everything. If you’re cutting carbs, not flavor, this one is for you. I don’t have a mandolin but I do have a Cutco knife that did the job just fine. I also don’t have a grill so after slicing, I roasted the zucchini for 10minutes at 425 degrees. Getting most of the water out is important. Finally, the simple sauce is really the star of this dish. It’s pretty freaking amazing. Enjoy!
