Baked Spaghetti Lite 

The grown “kids” I teach are on spring break this week and I have grand plans to catch up on work and hopefully get ahead. Since I won’t be packing lunch this week, my mealprep is thankfully lite. Going with the lite prep, this yummy Skinny Baked Spaghetti is almost a one pot dish. I substituted spicy Italian chicken sausage for the turkey sausage only because they didn’t have any at Trader Joe’s where I grocery shopped this week. And because, a bird is a bird. Growing up, baked spaghetti was a favorite dish in my house. Though nothing was healthy about it. Good thing this lightened up version lived up to my expectations. Enjoy! 

Any pasta, including gluten free, would work for this recipe. I used whole wheat

I froze the extra sauce for pasta on a rainy day
