Remixed: (Lighter) Yummy Easy Cobbler

Hey yall! This is not my journal, so I’ll try to keep it light. However, as I glossed over in my last post, times have been rough. But I’m working on my mental health and finding joy in the things that make me happy. I love celebrations and gift giving. Birthdays, including my own, are my favorite celebration. I don’t have many friends in Tennessee so opportunities to celebrate birthdays the way i do best (baking, duh) are few. This weekend a great friend had a birthday. Since we’ve work out together, I know that she has some fitness goals she’s working on. I’ve been thinking about trying a lighter version of my favorite Yummy, Easy Cobbler recipe so I decided to go ahead and put my thoughts into practice for a lighter birthday treat.

Here’s the lighter recipe:

  • 0.5 cup coconut oil (butter substitute)
  • 2.0 tsp butter extract
  • 1.0 cup all purpose flour
  • 0.5 cup sugar (you don’t need all the sugar the original recipe calls for)
  • 1.0 tbsp baking powder
  • pinch salt
  • 1.0 cup unsweetened almond milk
  • 4 cups apples, skin on (approx. 4 apples)
  • 1 tbsp lemon juice
  • 1/8 tsp cinnamon
  • 1 tbsp brown sugar (goes well with apples)

For the most part, I followed the original recipe except: (1) add the butter extract to the melted coconut oil (2) add the 0.5 cup sugar to the flour & milk mixture (3) mix the brown sugar and cinnamon with the chopped apples.

I was worried but it came out great! Of course, I put it in a mason jar with a cute ribbon. Hope she loves it!

  1. I love how straightforward and honest your photos are! I believe that people who are reading food blogs need honest photo results 😉 Honestly, when I was a new blogger, I do edit my photos a lot but they end up with many filters it didn’t even reflect the “real” image of my food. Even now, I still do edit some of my photos but I learn to minimize them. Keep it up! 🙂
