In my lunchbox this week is an original dish inspired by JoCooks-roasted veggie quesadillas.
Here’s what you need:
.25 tsp: Mexican chili powder, cumin, garlic powder, kosher salt, black pepper; 1 tsp olive oil; Mozzarella cheese (skim); Carb friendly tortillas; Veggies good for roasting (see pic below); Low sodium black beans, rinsed.
Here’s what you do:
Heat oven to 425 and spray cookie sheet with cooking spray. Chop veggies and toss with olive oil and seasoning blend. Grill sveggies for 15 minutes. Add grilled veggies to drained black beans.
Load carb friendly tortillas with cheese and veggies. Cook evenly on both sides, covering to assist in melting the cheese. Allow quesadillas to cool. Use pizza cutter to slice and eat right away or wrap and freeze.

Looks awesome! Do you think these would freeze well? I love having batches of food stocked up in my freezer ready for the baby’s nap refusal days, she healthy options are always welcome.
