GameTime: Cauliflower Pizza Crust  

I love football. Mostly college football but I allow the NFL to pacify me while I mourn the end of each college football season. In a couple weeks, I have no idea how I’ll spend my weekends. I also love good game snacks. Thanks in part to a first of the year stomach virus, I’m super close to meeting the weight goal I’ve been working on since November. And I’m not getting off track with my traditional football eats. I’ve been craving pizza lately. While this Cauliflower Pizza Crust is not bread, it gets the job done. I took a shortcut and bought frozen cauliflower rice. I think I need to attempt to get more moisture out. That’ll make for a crisper dough next time. I topped mine with 1 cup organic marinara, 0.5 cup skim mozzarella, veggies, and pork pepperoni (because Trader Joe’s didn’t have turkey). If you’re hosting a Super Bowl party, and want to stick to your resolutions, give this a try.

My crust fell apart when I flipped it-proceed with caution
Green pepper, red onion & garlic
Dropped some spinach in at the last minute
Salvaged the crust and got the toppings on
