As promised, I’m using my crockpot for a my January dinner, meal prep. These yummy Slow Cooker Sriracha Meatballs are great for those who love a little Asian spice. What I like most about these meatballs is that while the recipe calls for pork, they can be made with ground turkey, chicken, or beef. I chose turkey. They are also quick and easy to make although handling raw meat is not my favorite task. But, it was all worth it.
I took lots of liberties with my substitutions on this one as you’ll see in the pictures below. While these would be great for a party, I decided to build a bowl for my dinner this week with quinoa, broccoli slaw, sliced red bell pepper, jalapeño, and green onion. So yummy!
