Crock-Pot Skinny: Just Start Now

It’s almost the new year and I absolutely hate resolutions. Mostly because folks generally don’t stick to them and why wait until the 1st to do what you can do TODAY! To that end, I’ve been working hard to be more consistent with my blogging and increase traffic. It’s been a pretty successful three months and I’m excited about 2017. And I didn’t have to wait until the first to get going. You shouldn’t either. In January, I’ll be revamping my favorite “skinny” post and adding new dishes with a focus on slow cooker meals. Considering how much I love cooking, it’s crazy that I have only used my crock-pot three times since purchasing it almost three years ago. That’s about to change, starting with this Crock Pot Chicken Taco Chili.

I really don’t know why I don’t use my crock-pot more often. This was super easy to make-only two veggies to chop and toss everything, including raw chicken that was practically still frozen, in the pot.

Of course, I decided against the packaged taco seasoning

Cooked on high for 4 hours and ta-dah

It was pretty good just like this-if you’re cutting calories, you’ll be just fine

But if you have calories to spare, add some Monterrey jack 2% cheese, reduced fat sour cream, and chopped jalapeño peppers
