Skinny Baked Chicken Parmesan 

The time between Thanksgiving and Christmas can be stressful providing the perfect opportunity for comfort food overload. But I’m not letting the holidays catch me slipping this year. I’m relying on my favorite recipes like Skinnytaste Baked Chicken Parmesan to keep me on track. 

I failed at this recipe once so I made some changes to ensure all went perfect this time. 

First, I bought organic unseasoned bread crumbs from Trader Joe’s so I knew for this to taste great I needed to season them. I added salt, pepper, dried oregano, onion powder, garlic powder, and dried parsley to taste. 


Next, I seasoned the chicken lightly with salt and pepper. Based on past experience, I decided on melted butter instead of olive oil. An assembly line brings this quick meal together fast. 


While the chicken is baking, I get my wheat linguine boiling. I flipped the chicken halfway through. And ta-dah:


I tossed my pasta in the remaining marinara sauce for serving and sprinkle the pasta with Parmesan cheese before topping with one chicken breast. 

Finally, I recommend enjoying this dish with a little red wine. It’s heart healthy so go for it. Enjoy!
