The holidays will be filled with baked goods and complex carbohydrates. So I’m taking steps to make sure I can enjoy all that while preserving my waistline. To that end, breakfast this week is Pumpkin Pecan Granola. It’s so simple, yet so yummy. I followed the recipe closely. I used a standard baking sheet which didn’t get the center crispy. Next time I’ll divide the mixture between two sheets before baking. The recipe provided enough to fill two Mason jars. So I saved some for bae.
