One of my favorite waist-conscious bloggers is Gina Homolka at SkinnyTaste. I recently purchased her new book and look forward to posting a couple new favorite recipes. A while ago I posted my favorite SkinnyTaste recipe to date, Skinny Cajun Pasta. I’ve made this dish with chicken and shrimp and I absolutely love it. However, I did not feel like the boxed cajun seasoning brought enough flavor to the dish (though it definitely brought enough salt, something I can do without). So, I went searching for recipes to remix this dish. In comes Gal on a Mission Baked Chicken Breast. This is now my new favorite cajun seasoning blend. The chicken was so well-seasoned, that I only needed to add a small pinch of seasoning to the pasta sauce. Fortunately, after seasoning two large chicken breast (1lb), there was plenty leftover cajun seasoning. Check out the pics. I’m in love.
