No thanks on the pumpkin spice latte. For me #pumpkinseason is all about baking. You can reasonably expect something pumpkin on the blog often this fall. First up are these super yummy Pumpkin Cream Cheese Swirl Muffins. While they don’t bake up as pretty as I would like, they definitely make up for it in taste. I made a couple substitutions to lighten the muffins as much as possible:
- Unsweetened apple sauce (equal parts) for oil
- Light cream cheese
They were great and super moist. They make a large batch (18 muffins) too. Since I didn’t think they would freeze well due to the cream cheese, I took the rest of the muffins to the office and everyone loved them. Enjoy!
