It’s abundantly clear that I am a quinoa lover. I’ve made it a goal to replace quinoa for all other grains wherever possible. Enter my new favorite, Quinoa Cajun Jambalaya. This recipe has just the right amount of spice and flavor and can be made in one pot. I actually made this weeks ago, but waited to post until I had the opportunity to test freezing my leftovers to enjoy for lunch. The leftovers were just as good as the fresh batch. The ability to freeze and reheat dishes is extremely important to me since I usually cook for one and never want to waste food. This dish passes the test.
I made one recipe modification and omitted the pork, doubled up on the chicken and shrimp. I like pork in moderation. The dish was just as good as traditional jambalaya without it.
