I’m back!!! Sorry the blog has been dead for a couple months. After lots of summer traveling, I relocated for a new gig. While I have been cooking, I have not have much time to blog about the magic that has happened in my kitchen between moves. So I’ll be going in the archives for the next few post, but they’ll be new to you.
While packing for my relocation, I looked for meals that were simple and quick. Because I had little time for grocery runs and had packed most of my kitchen, the meals had to contained less than 10 ingredients and fit in about one pot. Insert this fast and yummy Coconut Curry Chicken Noodle Soup.
What I like most about this recipe is that you can control the spice. I like spicy so next time I will definitely add red chilis (omitted this time because I wanted to test flavor). I did salt and pepper my chicken breast before adding them to the dish. I absolutely hate handling raw meat, so this was the worst part of this mealprep for me. But I lived. And handling the chicken was worth it because this was amazing. The fish sauce taste was pretty strong which is cool if you like that, but I’ll probably scale back on it next time I make this dish.
Because I was eating this dish for multiple days, I decided to pour broth over noodles. Worked just fine. Enjoy!
