If spend a lot of time in the kitchen like me, you can appreciate simple meal prep. Last week my easy peasy dinner was Oven Baked Salmon with a Tangy Glaze with Lemon Garlic Quinoa with Roasted Red Peppers.
For the salmon, I substituted nonfat, plain Greek yogurt for mayonnaise because I do not like mayo and because Greek yogurt is a healthier option. You can’t tell the difference and if you can, you will probably prefer Greek yogurt.
I also omitted the fresh parsley from the quinoa. I don’t think I missed it, but you will have to let me know. The roasted, red peppers are really the star of that dish. Of course, the lemon in the quinoa perfectly complements the salmon. Enjoy!
