I been on a muffin kick lately. They make great grab-and-go breakfast treats and they freeze amazingly. I pop them in the microwave for a couple seconds or just eat them at room temperature. For the last month, I have been making and freezing muffins to eat for breakfast or a healthy, sweet treat on alternating weeks. My latest favorite muffin is the Skinny Banana Chocolate Chip Muffin
These muffins are easy to make-almost all the ingredients go in the blender. I substituted applesauce for oil in this recipe (it’s an even substitution). Next time I make them, I think I will use less chocolate chips and add nuts or maybe eliminate the chocolate all together and just add nuts.
Looking at the pic and writing about them is making me hungry. Fortunately, I have a frozen one thawing in the fridge.
