I have a month of busy weekends and travel ahead of me AND I’m working on getting #summertimefine before my birthday trip to Jamaica so I’m cracking down on my eating, getting in the gym no matter what, and focusing on simple meal prep. It doesn’t get any simpler than this Skinnytaste Chicken and Avocado Soup.
I boiled the chicken and shredded it while the soup simmered. If you wanted to cut down prep time, you could also purchase a rotisserie chicken and pull it. I like spice and seasoning so I made the following substitutions:
- 1 tsp each cumin and Mexican chili powder
- 1 chopped jalapeno (seeds removed)
