It’s #meatlessmonday! If you are celebrating Meatless Monday, you’ll love this Black Bean and Quinoa Salad. It is in my lunchbox this week. I did make a couple substitutions:
- I love chipotle peppers so I added 2
- Canned, rinsed low sodium black beans (they keep fine with oil in vinaigrette)
When I make this again, I am going to add charred sweet corn, but I am so excited about having this salad in my lunchbox this week. Enjoy!
