Veggie Lasagna Roll Ups

It’s Sunday which means meal prep for the week is in full effect. For dinner this week, I am loving these Spinach Lasagna Roll Ups. The thing I love about these rolls ups is that they are super easy to make and can be made ahead and frozen in exact meal portions. Making ahead and freezing well are super important to me since I’m usually cooking for one and I don’t always want to eat the same thing for a full week. I followed the recipe with the following changes:

  • Whole grain lasagna (explains the dark noodles)
  • Added 3 minced garlic cloves to filling (cause I love garlic)

I will definitely be making these again. For a serving, I had two rolls and that was a perfectly filling portion. If you celebrate meatless Monday this is your dish. You won’t miss the meat at all.
