Muffin Top (the good kind)

It’s Thursday and while on the treadmill this evening I decided I needed a healthy, sweet treat. I found these Whole Wheat Coconut Muffins, added chocolate chips, and made a party in my mouth. The recipe is really straightforward and easy to bake. I made a couple modifications:

  • vanilla extract (instead of coconut)
  • pure cane sugar (instead of white)
  • trader joes roasted coconut (instead of unsweetened)
  • added 1/2 cup chocolate chips

I sprinkled some coconut on top mostly for blog affect. These are sweet enough to satisfy a craving but not too sweet. Happy baking!
