Chocolate For Breakfast

I have not posted in a while because I am still reaping the benefits of my Sunday meal prep from two weeks ago. I also wanted to wait to post about these amazing Skinny Double Chocolate Chip Muffins until I had the opportunity to test them out after freezing. These muffins are easy to make and eat. I mean who doesn’t want chocolate for breakfast?! I am enjoying them for a second week after freezing half the batch. The first week I ate them at room temperature with a banana. I found the thawed muffins were better when slightly heated (10 secs on reheat in microwave).

My goal for the new year was to diversify my healthy breakfast and lunch options. I am happy to report that we are eight weeks into the new year and I am repeating meals for the first time. Next week I’ll be posting my favorite meals thus far as well as a couple guest posts from friends. When I return from my upcoming trip, I’ll have more recipes to share.
