Casserole Queen

Okay, maybe queen is a bit extreme. However, I love any dish that can be made in one pot, topped with cheese, and tossed in the oven for an easy meal for the week. I promise this will be the last quinoa recipe for a while, but if you like mushrooms (I don’t), you can have this one as the author of the recipe intended and skip the quinoa.  Dinner this week is Skinny broccoli & chicken casserole and it’s yummy. Check out my modifications and enjoy:

  • Seasoned chicken with salt & pepper befor cooking (next time I’ll grill the chicken on the George then cut because cutting raw meat isn’t my thing-you could also bake it)
  • Added 2 chopped, garlic cloves along with onions
  • Subbed 16 oz. tricolor quinoa for mushrooms
  • Topped with 1 cup fat free cheese
