It’s Super Bowl 50 Sunday! I’m not attending a party this year but I’ll definitely be watching. So I meal prepped my lunch for the week early to make my Sunday light. I am so in love with this Roasted Veggie Wheat Pizza. I made enough pizzas to test chilling and reheating. They are perfect fresh out of the oven or the fridge. I went easy on myself and purchased wheat flatbread rounds instead of making the dough. I roasted eggplant, red onion, red bell pepper, and zucchini. I added garlic to my carmelized onions cause I love garlic. For my lunchbox, I froze two slices in freezer bags. I might be more excited about lunch this week than the game!
